🇮🇹Scallop Crudo! (Fancy Raw Scallop Thing) 🇪🇸 The Japanese have Sashimi, in Spain/Italy the raw fish preparation is referred to as “Crudo.” In our case, we’re using these gorgy in-shell scallops from the American Northeast. The idea is simple. Slice some nice fish with precision and care, then serve it in a simple way with pretty garnish and maybe a little sauce to pimp it out.
