These are packed with veggies (fiber) + ground beef (protein). Definitely an easy dinner to add into your rotation. And yes, weâre using a little shortcut but thatâs what makes life easier (plus a mini meal prep tip đ)
Meatball recipe:
2 lbs ground beef
3 small or 2 medium carrots
1 small onion
1 medium zucchini
1 handful parsley
Finely chop all veggies in a food processor, then add to the beef
Add:
1 egg
Salt + pepper to taste
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1/2 tsp oregano
1/2 tsp cumin
Mix until well combined + let sit 5â10 minutes
Form into even meatballs (wetting your hands to shape helps) and sear in a drizzle of avocado oil until a nice crust forms ~5 min per side
TIP: If you donât need all the meatballs, freeze the extra raw mixture for next time
Add your favorite store bought marinara sauce I used @hobokenfarms BASIL MARINARA (you want to look for minimal ingredient sauces)
mix, bring to a simmer, then cover + cook on low for 30 minutes to 1 hour (depending on how much time you have)
Serve with spaghetti, zoodles, or even in a crusty baguette + a fresh crispy side salad

the easiest one-pot weeknight dinner youâll keep on making, did I mention itâs delicious??
Hereâs how:
1. In a large pot, sautĂŠ 1 lb chicken breast or thighs (cut into cubes and seasoned with salt + black pepper) with 2â3 tbsp oil until it starts getting a nice golden color
2. Add 1 chopped onion + sautĂŠ until soft and fragrant
3. Add 1 box of @barillaus orzo + toast for a few minutes on medium-high heat
4. Season with salt + pepper, 1 tsp cumin, 1 tsp paprika, 1â2 tsp onion soup mix (or consommĂŠ), and ½ tsp hawaij
5. Mix in ½â1 bag peas (I used the whole bag đ¤)
6. Add 4 cups water, bring to a boil with the lid slightly open + let cook for about 10 minutes, mixing occasionally
7. Lower the heat, cover fully, and let it cook until all the water is absorbed and everything is soft + fluffy
Tip: freshly chopped dill mixed in takes it to the next level đż
Serve with a fresh crunchy salad on the side and youâre done đĽ

I call these crispy âschnitzelâ wraps and youâre definitely adding them to your dinner rotation đĽ°
Hereâs what youâll need:â¨â˘ 1 lb ground chickenâ¨â˘ 1 small onion, 1 zucchini, and 2 carrots, grated
Seasoning:â¨â˘ Salt + pepper, to tasteâ¨â˘ 1 tsp garlic powderâ¨â˘ 1 tsp onion powderâ¨â˘ 1 tsp paprikaâ¨â˘ ½ tsp cuminâ¨â˘ 1 tsp hawaij
Youâll also need:â¨â˘ Wraps of choiceâ¨â˘ Breadcrumbs mixed with sesame seedsâ¨â˘ Avocado oil
Hereâs how:
1. Mix the ground chicken with the grated veggies and all the seasonings until well combined, let it sit for about 30 minutes
2. Lightly char your wraps on both sides and set aside
3. Spread a nice layer of the chicken mixture onto each wrap (wet hands make this sooo much easier)
4. Sprinkle the breadcrumb + sesame mix on top and shake off any extra (feel free to not add the breadcrumbs if you want a really low carb dinner)
5. Heat a pan with a little avocado oil over medium-high heat and cook for 4â5 minutes per side, flipping occasionally, until crispy and cooked through (put it on high heat for a minute or two)
6. Repeat with the rest
Serve with:â¨A fresh crunchy salad tahini and schug for the ultimate bite
OR whatever sauces / vibe youâre feeling the combinations are endless for this dinner
