I like to toast the puffed quinoa for 5 or so minutes as it really adds to extra crunch but this is entirely optional.
PS if you don’t have the egg mould just use cupcake cases or freestyle it on some parchment paper
Also for those of you that always ask about puffed quinoa I don’t puff it myself I get it from @justnatural_uk along with their amazing smooth organic peanut butter (PR gifts).

Makes 10-12 eggs
Ingredients:
150g vegan dark chocolate
1/2 cup (120g) peanut butter
1 cup (25g) puffed quinoa
1/3 cup (45g) chopped pistachios
1/3 cup (40g) shelled hemp seeds
2 tbsp freeze dried strawberries, optional but great for a bit of colour
1️⃣ Toast the puffed quinoa for 5 mins in a medium oven so it’s crispy
2️⃣ Whilst it’s in the oven, melt the chocolate over a pan of hot water and then add in the peanut butter and mix well. Once the quinoa is ready add this too with the pistachios and hemp and mix to combine everything
3️⃣ Spoon into a silicone tray, press down firmly and sprinkle over more nuts and some freeze dried berries and leave in the fridge for an hour to set

Red pepper dip ingredients:
1/2 cup roasted walnuts
2 large roasted red peppers (I used jarred ones for ease)
1 tsp sea salt
1 tsp smoked paprika
1 tbsp lime or lemon juice
2 garlic cloves
400g tin of white beans such as cannellini, drained
2 tbsp olive oil or water if you prefer oil free
Other ingredients in my bowl:
Rocket leaves
Carrots
Red cabbage
Chioggia beetroot
Paprika roasted tofu
➡️ Combine all the dip ingredients into a blender or food processor and blend until smooth.

Recipe for the mini egg granola cups:
Makes 24 mini cups
Ingredients for the cups:
2 cups granola
2 tbsp coconut oil
2 tbsp almond butter
2 tbsp maple syrup
Ingredients for the filling:
2/3 cup coconut cream
2/3 cup chocolate chips
Vegan mini eggs (I used @doisyanddam )
1️⃣ To make the cups, blend 2 cups of granola until only small pieces remain then add in the coconut oil, almond butter and maple and pulse until combined
2️⃣ Spoon the mixture into a silicone mini muffin tray and use your hands to press down firmly. Make a small indent into each cup with the back of a spoon. Refrigerate.
3️⃣ To make the chocolate ganache, gently heat up the coconut cream in a small pan until hot but not boiling. Take off the heat and add in the chocolate and stir until fully melted. Leave to cool and it will gradually thicken.
4️⃣ Once the ganache is cool, pipe (or spoon) into the granola cups and top with a mini egg 😍
