An amazing evening at the Lyric Opera House in Chicago for this year’s James Beard Awards with Waldorf Astoria and Hilton. Widely known as the ‘Oscars of the food world’, the evening shined a light on so many of the most promising, accomplished and hard-working chefs and restaurants in the industry. Good food, good wine and even better company at the after-party, where the Waldorf Astoria installation took centre stage with its caviar station featuring duck fat fried potato chips with a green garlic sauce, and their Spring Vignarola station. I was lucky enough to be invited to an exclusive dinner in the lead-up to the awards, hosted by Waldorf Astoria chefs @chefmikeanthony and Nicholas Marino, serving up the most delicious five course meal!

Courgette flowers, smoked mozzarella, chilli and parm, all on an ultra thin and crispy, Roman-style base. This was delicious. Definitely my favourite pizza on the menu here. Chilli oil on the side worked wonders. Rich and satisfying but so light at the same time. The warm chocolate chip cookies and vanilla ice cream rounded this off perfectly. Always a vibe at chiltern #notoriousfoodie 🙅🏽♂️
